Easter Bread


125g butter, soft
100g brown sugar
125g golden syrup
1 egg yolk
375g plain flour
1 tbsp mixed spice
1 tsp bi-carb soda


Pre-heat oven to 180C.

Beat butter and sugar until pale and creamy.

Add golden syrup and egg yolk and stir to combine.

Fold through dry ingredients.

Knead into a ball, press flat and wrap in cling wrap.  Rest in fridge.

Roll out to 1/2cm thickness and cut into shapes.

Bake for 10 minutes or until brown. 

Allow to cool and decorate with chocolate.
